Stove-Top Apple Filling for Deconstructed Apple Pie (AIP, Paleo)

  • 1 tsp coconut oil
  • 4-5 apples, peeled, cored, and diced
  • 1 tbsp lemon juice
  • 1 tbsp honey
  • 1 tbsp coconut sugar
  • 1 tsp ground cinnamon
  • ⅛ tsp ground ginger
  1. In a saucepan melt coconut oil over medium heat. Immediately add apples, coconut sugar, cinnamon and ginger.
  2. Stir to coat, and then stir in honey.
  3. Allow mixture to simmer until apples release juices and begin to soften. However, you want the apples to retain their shape and not get mushy. This should take 5-7 minutes.
  4. Remove from heat and set aside.
