Matcha-Lime Pudding (AIP, Paleo, Vegan)

  • ½ c dates, pitted, chopped, and soaked in 1 c of boiled water for 15 minutes
  • 3 tbsp honey (Use maple syrup for vegan version.)
  • ¼ c filtered water
  • 2 tsp Your Tea Matcha
  • 3 ripe avocados, peeled and pitted (about 1.5 c)
  • ¼ c coconut oil, melted
  • 2 tbsp lime juice
  • 2 tsp lime zest
  1. Place pitted and chopped dates in bowl and cover with 1 c boiled water. Let this sit for 15 minutes.
  2. Drain dates and place in the food processor with the honey. Process until smooth.
  3. Mix matcha in ¼ c filtered water. Add to food processor along with all other ingredients.
  4. Process until smooth and creamy.
  5. Transfer to serving dishes and chill for at least 30 minutes before serving. Top with fresh berries and additional lime zest.
  6. This pudding keeps well refrigerated for 2-3 days.
