Meet my dad! With Father’s Day approaching, I thought it…

Cauli-Leek Mash (Paleo, AIP)
This time of year people are looking for the familiarity and nostalgia of comfort foods like that big bowl of creamy mashed potatoes that adorns most tables during this festive season. Because white potatoes are a nightshade and thus eliminated on the Autoimmune Protocol, I opt for the deliciousness of this Cauli-Leek Mash instead.
Head on over to Samantha McLellan’s blog, Sweet Potatoes and Social Change, to find out my secret for making this mash oh-so-good and nom-able to even the die-hard tater eaters!
Samantha and I both deal with IBD (I have Crohn’s; she has ulcerative colitis), and we are like-minded in that we are both passionate about using food as medicine, specifically AIP.
Needless to say, I was happy to write a post for Samantha while she’s busy moving. My guest post offers some insight as to how far I’ve come in my healing journey as well as shares this scrummy Cauli-Leek Mash recipe. Head on over to Samantha’s blog to check out not only this post, but all the other wonderful recipes and tidbits she shares over there.
