Berries and herbs: they make for such a lovely combo, don’t they? I especially adore how raspberries and mint meld, producing a clean, fresh, ambrosial flavour. Add in the COYO for a creamy factor and you have a veritable palate-pleaser.
Plus we can’t go wrong with getting in a dose or two of phytonutrients when we nom on foods that have gorgeous deep, rich, colourful hues as do raspberries.
This pretty-in-pink Raspberry-Mint COYO Dressing is tasty atop a bed of bountiful greens, but it also doubles as a fantastic dip for veggie sticks. Enjoy!
Raspberry-Mint COYO Dressing (Paleo, AIP)
Recipe type: Condiment / Dressing
- 1 c coconut yogurt
- ½ c raspberries
- 1 tbsp. apple cider vinegar
- 1 tbsp. lime juice
- 1 tsp honey
- 1 tbsp. fresh mint
- Using a traditional blender or a hand-held immersion blender, process all ingredients until smooth.
- Chill until ready to serve.
